Los Dos Potrillos Castle Rock opened in 2024 at 6370 Promenade Parkway as the sixth location from the Cordero family, who started the original Centennial restaurant in 2002. The Castle Rock concept is a step up in scale and design from the older locations: 9,000 square feet, an enclosed 1,000-square-foot patio with mountain views, equestrian-themed decor, and an interior inspired by Cabo San Lucas more than the working-class strip-mall feel of the Highlands Ranch and Centennial originals.
The kitchen and the menu carry over. Same Aguascalientes-style regional Mexican: tacos al pastor with marinated pork shoulder and pineapple, chiles rellenos with poblano and slow tomato sauce, the molcajete (volcanic-rock bowl with grilled chicken, pork steak, shrimp, and cactus leaves) for two or three to share, ceviche made daily, carne asada, in-house tortillas. Sixty house-favorite options across burritos, tacos, enchiladas, and fajitas. Breakfast available Friday through Sunday until noon, with huevos rancheros and a short omelet menu.
Margaritas are $5 and they're large; the margarita flight covers four flavors and is the move for a first visit. The Sandia (Corralejo Silver, Chamoy, fresh watermelon, Tajin rim) is the seasonal standout. Tequila list runs over 100 deep across the family's restaurants and brewery operation.
The trade-off vs. the Highlands Ranch and Parker locations: this one does NOT take reservations. They'll do their best to seat your group, but on a Saturday at 7pm the wait is real. The room is bigger so the wait moves faster than at HR, but the no-reservations policy means you commit to being there. For the food and the margaritas, the wait is worth it.

Mon-Thu 11am-9pm, Fri-Sat 9am-10pm, Sun 9am-9pm. Friday-Saturday dinner has 30-60 minute waits without a workaround. Sunday brunch backs up after 11am. Weekday lunch is calm.
Sit at the bar if you can't get a table. No-reservations policy means the bar turns over fastest, the bartenders run their own happy-hour list, and you get the same kitchen and same margaritas at half the wait. Order one margarita first to calibrate the strength before committing to the flight.
No reservations, period. If your party is larger than four on a Saturday, expect 60+ minutes. The room is loud at peak hours; if you want quiet conversation, go on a weekday or take the Parker location instead. The Sandia margarita is dangerously drinkable; pace yourself.
